This Spinach Artichoke Dip is an indulgent-feeling snack packed full of healthy fats and veggies. Enjoy this as a snack or a light meal!
1 C Avocado Oil Veganaise (Sir Kensington or Primal Kitchen)
1 ½ C Parmesan Cheese, Shredded
1 Clove Garlic, Pressed or Finely Minced
14-oz Can Artichokes, Drained and Chopped
9 oz Frozen Organic Spinach, Thawed and Squeezed Dry
¼ C Raw Colby or Monterey Jack Cheese, Grated
2 Tbsp Organic Red Bell Pepper, Finely Diced
Preheat oven to 350. Combine veganaise, parmesan, garlic, artichokes and spinach in a baking dish and mix well. Top with raw grated cheese and bell pepper. Bake for 20 minutes, until golden brown and bubbly.
