Healthy Grain-Free Black Bean Brownies

 

These are SO simple to make – takes about 5 minutes!!

Ingredients:

2 Cups Black Beans (About 1 Can, Drained)
3 Eggs, Lightly Beaten
1/3 Cup Coconut Oil, Melted (or melted butter)
1/4 Cup Cacao or Cocoa Powder*
1/8 Tsp Salt
2 Tsp Vanilla Extract
1/2 Cup Honey (I used xylitol, and added more oil) Be mindful of your sweetener choice if you are watching your carbs. 
1/2 Cup Bittersweet or Semi-Sweet Chocolate* Again, if you’re mindful of your carbs, choose accordingly
1/3 Cup Walnuts, Finely Chopped (optional)

Instructions:

  1. Preheat the oven to 350°.

  2. Grease an 8×8 pan (not aluminum! Not leaded glass! I use a Pampered Chef baking stone).

  3. Toss all but the chopped-up chocolate and walnuts into a blender or food processor and blend until smooth.

  4. Fold in the chopped chocolate and walnuts (I do this right in the blender).

  5. Pour into the pan and bake for about 30 minutes. Adding an extra sprinkle of chocolate chips or chocolate ganache (Equal parts chocolate and heavy cream gently melted together) on top makes it seem very elegant.
