Grain-Free Banana Muffins

 

Ingredients:

Blueberry Banana Muffins:

  • 3 cups almond flour

  • ¼ tsp sea salt

  • 1 ½ tsp baking soda

  • 2 T macadamia nut or melted coconut oil (I like to use ¼ cup)

  • 3 large eggs

  • 2 cups (4-5) mashed very ripe bananas

  • 1 cup frozen blueberries

  • 1 tsp stevia (optional)

Chunky Monkey Muffins:

  • Same as listed above

  • omit blueberries

  • 1 cup chocolate chips

  • 1 cup peanut butter

Instructions:

  1. Add all ingredients, except mix-ins, to a large bowl. Mix well.

  2. Gently fold in your mix-ins. (blueberries, chocolate chips, etc)

  3. Put it in stoneware muffin pans.

  4. Bake 35-40 minutes at 350, and let cool in pan for 30 minutes.

  5. Enjoy!

Remember: Always AVOID non-stick pans and cookware always! They are all very toxic!
